If the pan becomes too dry, add a little water, 1/4 cup at a time, to prevent sticking.

Continue cooking until the carrots are tender and deeply caramelized, about 10-15 minutes more. The edges should be golden brown and the liquid should be syrupy.

Serve hot as a side dish or garnish.

Tips:

For a richer flavor, use a combination of brown and white sugar.

You can also add other spices like cinnamon, nutmeg, or ginger to the pan for a touch of warmth.
If you like your carrots a little softer, you can add the water at the beginning of cooking and simmer them until tender, then reduce the heat and caramelize them.


Method 2: Oven Roasting

Oven Roasted Caramelized Carrots

1 pound carrots, peeled and cut into wedges or thick rounds

Instructions:

Preheat oven to 400°F (200°C).

Toss the carrots with olive oil, honey, salt, and pepper in a large bowl.

Spread the carrots in a single layer on a baking sheet.

Roast for 25-30 minutes, or until the carrots are tender and caramelized around the edges.

Tips:

You can add other vegetables to the pan, such as parsnips, potatoes, or Brussels sprouts.
For a more intense flavor, try using balsamic vinegar instead of honey.
